I am kinda in an overdrive spring-cleaning mode. Not only do I want my house to be sparkly and organized, but I want to clean out my pantry as well. I have been trying to come up with meals that use a lot of the pantry staples we have, like oatmeal and applesauce, so that I can re-stock with fresh items. I came up with these mini-muffins after browsing the web and combining a few recipes that I liked. They are really quick (only took half of a nap-time) and my son gobbles them up. Best of all they are pretty low in calories and almost fat-free. You could add protein powder or flax seeds to beef them up, but I like them just the way they are.
Applesauce and Oatmeal Mini-Muffins
Servings: 40 mini-muffins

Ingredients
1 cup skim milk
1 cup uncooked quick oats (not instant)
1 tsp vanilla extract
2 tsp ground cinnamon
1/2 cup unsweetened applesauce
1 egg
1/2 cup packed brown sugar
1 tsp baking powder
1/2 tsp baking soda
1 cup whole wheat flour
Topping
2 Tbsp sugar
Directions
-Mix together milk, oats, vanilla and 1 tsp cinnamon. Let sit 20 minutes.
-In a separate bowl mix together flour, brown sugar, 1 tsp cinnamon, salt, baking powder and baking soda.
-After 20 minutes, add egg and applesauce to the soaked oats. Stir until just combined.
-Pre-heat oven 400.
-Fill a sprayed mini-muffin tin with batter so that you have 40 muffins.-In a separate bowl mix together flour, brown sugar, 1 tsp cinnamon, salt, baking powder and baking soda.
-After 20 minutes, add egg and applesauce to the soaked oats. Stir until just combined.
-Pre-heat oven 400.
-Sprinkle lightly with sugar (I use pearl sugar, but regular sugar will work too).
-Bake 8 minutes.
-Remove from oven, cool 1 minute and then transfer to cooling rack.
