Left over Chinese to Mexican Fiesta in 10 minutes

Last night Hubby and I ordered Chinese food--YUM! As always, there were leftover, including a whole container of brown rice. Did you know that one of those paper containers holds about 4 cups of brown rice? That's a lot of rice to waste, and lets face it, I am not a huge fan of leftover Chinese food. BUT, I am a HUGE fan of Mexican food. The common denominator here? RICE.

Since Quesadillas were on the menu for tonight anyway, this was the perfect opportunity to change my Chinese leftovers into a fab Mexican Fiesta, and it only took 10 minutes!

Mexican Rice and Beans (makes 6 cups)
4 cups brown rice--16 points
1 can black beans, drained and rinsed--7 points
1 packet GOYA Sason sin annato seasoning--0 points
1/4 cup frozen corn--1 point
1/4 cup diced peppers--0 points
1/4 cup diced onion--0 points

In a large saute pan over medium high heat, saute peppers and onions until soft. Reduce heat to medium. Add black beans, Sason and 1/4 cup water. Simmer for 5 minutes until most of liquid evaporates. Stir in rice.

Makes 6 cups of rice and beans, all for 24 measly points! That is 4 points a cup, or 2 points for a half cup. Not bad, not bad at all.
